Steaks – Mushroom Fumé Recipe
For great grilled steaks, use this recipe to impress your friends and family with George’s recipe for Mushroom Fumé:
Mushroom Fume
Mushroom Fume
- Shred 2 lbs mushrooms
- Place in pot with 1 qt water
- Add 2 oz sherry
- 1 tsp black pepper
- 1 tsp Worcester sauce
- 2 tsp salt
- Bring to boil
- Simmer 5 minutes
- Strain and return fluid to the pan
- Add 1 cup heavy cream
- 1 tbs dried basil
- Bring to boil
- Add ½ cup cornstarch suspended in 1 cup water
- Allow to thicken
- Mix in 2 tbs soft butter
- Return ¼ of mushrooms to mix
- Adjust seasoningRemaining mushroom duxeile is good on sandwiches and steaks
