Steaks – Mushroom Fumé Recipe

Great steaks at The Willowtree Inn, Stroudsburg
For great grilled steaks, use this recipe to impress your friends and family with George’s recipe for Mushroom Fumé:
Mushroom Fume
  • Shred 2 lbs mushrooms
  • Place in pot with 1 qt water
  • Add 2 oz sherry
  • 1 tsp black pepper
  • 1 tsp Worcester sauce
  • 2 tsp salt
  • Bring to boil
  • Simmer 5 minutes
  • Strain and return fluid to the pan
  • Add 1 cup heavy cream
  • 1 tbs dried basil
  • Bring to boil
  • Add ½ cup cornstarch suspended in 1 cup water
  • Allow to thicken
  • Mix in 2 tbs soft butter
  • Return ¼ of mushrooms to mix
  • Adjust seasoningRemaining mushroom duxeile is good on sandwiches and steaks
